Dairy is a cornerstone of nutrition and livelihoods in Eritrea, but many farmers cannot break even. Since 2021 we have supported Teagasc in implementing CSARIDE, the EU-funded dairy project, across 11 missions. We trained processors in affordable products and longer yoghurt shelf life, introduced ration calculators and farm training, and helped the national laboratory draft test methods and procedures. Technical training on its own is not enough: dairy needs entrepreneurial leadership, affordable equipment and finance. In June 2025 we published a facilitator manual on running milk collection centres as cooperative businesses.
